DIY:Drunken chicken wings

【明報專訊】There are many ways to cook chicken wings. You can bake, deep fry, steam or stew them. Drunken chicken is popular among the Chinese community and it is a renowned cold dish. The recipe is relatively easy. Let's take a look at this ''cool '' dish!

◆Ingredients:

.4-6 thawed chicken wings

.Chinese cooking wine 300ml

.Seasoning: ˙salt˙soy sauce ˙pepper

.Dried longan (桂圓)

.Rock sugar (冰糖)

.Goji berries (杞子)

(1) Season the chicken wings for 10 to 20 minutes.

(2) Brew the rock sugar, dried longan and goji berries in half a cup of hot water for 10 minutes.

(3) Steam the chicken for 10 to 12 minutes or until it is done.

(4) Mix the brew in step 2 with the Chinese cooking wine. After that, put the steamed wings in it and make sure the wings are fully immersed.

(5) Leave the wings in the fridge overnight and serve.

◆Tips

Frozen meat often has a strange taste because sometimes we re-freeze them after they are thawed and odour (臭味) transfers from one kind of food to another. To reduce the unpleasant flavour, put the thawed meat in boiling water for 30 seconds before cooking.
